Tamales Just Might Be the best food ever created. A New Mexican staple.

If you have ever had a good one, you know just what we're talking about. Wrapped in dried corn husks, tamales have been around the American continent for thousands of years, originating as a portable ration for war parties in the ancient Americas.

Tamales are enjoyed year round at restaurants and homes in New Mexico, and are particularly popular during the winter holiday season.

Tamales are a fun food because each one is like a mini-present. They're great at parties, and are an excellent, inexpensive way to entertain a large number of people.

They hold well, so they can be refrigerated or frozen, thawed and then steamed as needed.
